Rise & shine, sunshine! Ancient grain farro lends a nutty flavor to this great day-break treat! Our recipe for a Blackberry Breakfast Parfait uses frozen Oregon blackberries or raspberries for a convenient any-time-of-the-year go-to breakfast parfait.
Blackberry Breakfast Parfait
1 C cooked and cooled farro
1 T of agave or honey
1/8 t fine sea salt
1 T lemon Juice
¼ t nutmeg
¼ t cinnamon
1/8 t cayenne pepper
2 C of plain Greek yogurt
1 C of thawed frozen blackberries or raspberries
4 1-cup mason jars with lids or other 1 cup containers with lids
Prepare faro and let cool.
In a small bowl combine the farro and 2 tbsp of the agave or honey, lemon juice, nutmeg, cinnamon, cayenne pepper and salt.
In a 2nd small bowl, combine the yogurt and remaining agave or honey.
Spoon 2 tablespoons of faro mixture into each jar, top with ¼ cup of the yogurt mixture and 2 tablespoons of berries. Repeat layers.
Seal the jars with the lids and keep in the refrigerator for up to 5 days.
