For the Batter
2½ Cups all-purpose flour
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1 teaspoon baking powder
½ teaspoon fine sea salt
¼ teaspoon baking soda
4 Tablespoons unsalted butter, melted
½ Cup packed brown sugar
½ Cup molasses
1 Cup milk
⅓ Cup sour cream
1 Cup fresh, frozen, or canned blackberries
For the Glaze
½ Cup fresh, frozen (thawed), or canned blackberries
1 Cup powdered sugar, sifted
Step 1 Preheat oven to 350℉. Spray two 6-count donut pans with cooking spray.
Step 2 In a medium bowl whisk together flour, ginger, cinnamon, baking powder, salt, and baking soda. In a large bowl whisk together butter, brown sugar, molasses, egg, milk, and sour cream. Fold in dry ingredients. Fold in berries.
Step 3 Divide batter between donut pans and bake until golden brown, 15-20 minutes. Let cool 5 minutes in pans, then remove to a rack to cool completely.
Step 4 For glaze, in a food processor or blender pulse blackberries until liquid, then strain through a fine-mesh sieve. Discard seeds. In a medium bowl whisk together powdered sugar and 2 tablespoons blackberry puree until smooth.
Step 5 Dip tops of donuts in blackberry glaze, allowing excess to drip off. If desired, decorate with sprinkles before glaze sets.
