Marionberry Date Bars

Easy to eat, these sweet Marionberry Date Bars have a little crunch and are great cut into large squares and topped with ice cream! This recipe uses Oregon marionberries, a blackberry variety that was cultivated in Marion County, Oregon. Whip up a batch today and enjoy!

Ingredients

Filling Ingredients
3 Cups Marionberries (blackberries), whole (frozen or fresh)
3 Cups dates, chopped
1/4 teaspoon salt
1/4 Cup water
1 Tablespoon lemon Juice

Crust and Topping Ingredients
1 3/4 Cups flour
1 3/4 Cups rolled oats
1 Cup brown sugar
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 Cup butter, melted

Preparation

Filling Preparation
Step 1
Combine blackberries, dates, and water.

Step 2
Cook over low heat, stirring frequently, until dates and berries blend into thick purée.

Step 3
Add salt and lemon juice.

Step 4
Remove from heat and set aside.

Crust and Topping Preparation
Step 1
Preheat oven to 350°F. Combine dry ingredients in medium sized bowl.

Step 2
Add melted butter or margarine and stir to crumb consistency.

Step 3
Pour slightly more than half the crumbs into a 9 X 13 inch pan.

Step 4
Pat to form firm crust.

Step 5
Bake 350°F – 12 minutes.

Step 6
Spread filling over baked crust.

Step 7
Top with remaining crumbs.

Step 8
Bake 350°F – 25 to 30 minutes.

Step 9
Cool to room temperature.

Step 10
Cut and serve.
