Oregon Blackberry Shrub

This recipe for an Oregon Blackberry Shrub is a non-alcoholic syrup made of a combination of Oregon blackberries, sugar and vinegar and garnished with lime and mint. Created by Chef Gregory Gourdet for a bright and berry-ful summer menu, this is the perfect zero proof drink to enjoy all summer long!

Ingredients

For the Oregon Blackberry Shrub

2 cups Oregon blackberries (fresh or thawed frozen), plus extra for garnish
1 cup sugar or maple syrup
1 cup rice wine vinegar

For the Blackberry Shrub Drink

A few berries
Lime slices
⅔ cup club soda, sparkling water, or seltzer
Mint sprigs

Preparation

For the Oregon Blackberry Shrub

Step 1
Combine the berries, sugar, and vinegar in a blender and puree on high until as smooth as possible.

Step 2
Transfer to a small saucepan, bring to a boil over high heat, then immediately turn off the heat.

Step 3
Pour the mixture through a medium-mesh strainer set over a bowl to strain out the seeds.

For the Blackberry Shrub Drink

Step 1
Fill each glass with ice, lime slices and berries.

Step 2
Pour in 1/4 cup of the berry shrub (or more for a bold drink), top with soda, and stir well. Garnish with the mint sprigs.
