Oregon Blackberry Grilled Chicken

For the Blackberry BBQ Sauce

2 cups all-natural ketchup
1 cup Oregon blackberries (fresh or thawed frozen)
1 tablespoon black peppercorns
5 large cloves garlic
2 tablespoons honey

For the Blackberry Grilled Chicken

3 pounds of skin on, bone in, chicken thighs
1 tablespoon kosher salt


Step 1
Combine the ketchup, blackberries, peppercorns, garlic and honey in a blender and blend until smooth.

Step 2
Season chicken well all over with salt. Toss with BBQ Sauce to coat well and let marinate at least one hour or even better, overnight.

Step 3
Grill chicken on a hot grill until charred and crispy and cooked through.
