Blackberry Curry Chicken Salad

2 cups ½-inch diced cooked boneless skinless chicken breasts
⅓ cup roasted cashews (or almonds)
3 stalks celery finely chopped
1 cup blackberries, quartered
2 tablespoons red onions, diced
2 tablespoons fresh cilantro, minced
3 tablespoons nonfat plain Greek yogurt
1 tablespoon mayonnaise
2 tablespoons freshly squeezed lemon juice
1 ½ teaspoons pure maple syrup (or honey)
2 ½ teaspoons curry powder (plus additional, to taste)
½ teaspoon kosher salt
⅛ teaspoon ground black pepper


Step 1
In a large bowl, place the diced chicken, cashews, celery, red onions and cilantro.

Step 2
In a separate bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, maple syrup, curry powder, salt, and black pepper until smooth.

Step 3
Pour the dressing over the top of the chicken mixture. With a big spoon, stir gently to evenly coat and combine. Fold in chopped blackberries.

Step 4
Enjoy cold or at room temperature inside lettuce cups, pita, on toasted bread, or as a dip with crackers.
