Gin Fizz with Raspberry-Lavender Shrub

Shrubs are a perfect mixer for cocktails, with soda, or in mocktails. This Oregon raspberry shrub is refreshing with just a hint of lavender. A Gin Fizz with Raspberry-Lavender Shrub is the perfect warm summer’s eve cocktail. Feel free to use another aromatic like thyme or mix it up with another Oregon berry like marionberries, loganberries or boysenberries.

Ingredients

For the Shrub

1 pint raspberries, gently washed
1 lavender sprig
1 Cup sugar
1 Cup apple cider vinegar

For the Cocktail

6 ounces gin
6 ounces raspberry-lavender shrub
2 egg whites
ice

Preparation

Shrub Steps

Step 1
Crush the raspberries and lavender in sugar and macerate in the refrigerator for at least two hours, or up to two days.

Step 2
Strain through a sieve, scraping the juice and purée through the sieve with a rubber spatula. Discard solids.

Step 3
Combine the purée with the vinegar in a bottle with a cork, and if you have time, let this mellow for a couple weeks.

Cocktail Steps

Step 1
Shake the gin, raspberry shrub, and egg white in a shaker full of ice, then pour into four glasses.

Step 2
Top each with 3 ounces of seltzer and stir.
