Ingredients

For the Spiced Blackberry Jam

12 ounces fresh or frozen Oregon blackberries
⅓ cup Chambord liquor (or crème de cassis or water)
1 cup sugar - 200 grams
Zest of lemon, juice of half a lemon
6 fresh mint leaves, finely chopped
6 fresh basil leaves, finely chopped
½ teaspoon ground pepper
1 tablespoon cornstarch mixed with 1 tablespoon cold water

For the Turkey Grilled Cheese

2 slices of thick white or sourdough loaf
Smear of Boursin herbed cheese or herbed goat cheese
2-3 teaspoons of prepared spiced blackberry jam
¼ cup or more of grated swiss cheese, I like Jarslberg
3-4 slices of deli turkey
3-4 thin slices of double creme brie
2-3 tablespoons salted butter

Preparation

Step 1
Prepare your jam by adding your Oregon blackberries into a small saucepan along with your Chambord liqueur and sugar. Allow this mixture to come to a boil on high. Once boiling, add your lemon zest and juice and reduce to medium-low for 35-40 minutes. Once mixture is broken down add your minced herbs, ground pepper and cornstarch water slurry. Allow to cook for another 15 minutes then remove from heat to cool. Once cool, store in the fridge.

Step 2
Assemble your sandwich by slicing two thick slices of bread, spread a bit of your herbed cheese on one side, then add your Spiced Blackberry Jam, shredded swiss, turkey and finally your brie.

Step 3
In a skillet, heat 1 tablespoon of salted butter on medium-low. Place your sandwich down and allow it to cook slowly, adjusting the temperature to low. Once browned on one side begins to melt, add another 1-2 tablespoons of butter and flip to grill on the second side.

Step 4
Once fully melted and golden, enjoy! I like to have a little extra jam dipping sauce on the side!
