Balsamic Roasted Marionberry Bruschetta

Roasted berries and creamy burrata cheese are a delicious combination in Balsamic Roasted Marionberry Bruschetta. You can use Oregon Blackberries, Marionberries, or Oregon Raspberries in this tangy, tasty appetizer.

Ingredients

1 cup frozen blackberries, raspberries, or both
2 tablespoon balsamic vinegar, plus more for drizzling
1 teaspoon olive oil, plus more for drizzling
Pinch sea salt
Pinch freshly ground black pepper
4 basil leaves, thinly sliced
1 ball (about 4 ounces) burrata or fresh mozzarella cheese
1 whole grain baguette, sliced thinly

Preparation

Step 1
Preheat oven to 400°F. Place frozen berries in a small baking dish or on baking sheet lined with parchment. Coat berries with olive oil and balsamic. Sprinkle with salt and pepper.

Step 2

Roast berries for about 15 minutes. Remove from oven and let cool slightly.

Step 3

Meanwhile, Cut the baguette into slices and place on a separate baking sheet. Toast in the oven for about 10 minutes.

Step 4

If using a baking dish, place burrata directly in the center of the berries. If you are using a baking sheet, transfer berries to a serving dish and place the burrata in the center. Drizzle lightly with oil and balsamic and sprinkle with basil.

Step 5
Serve with toasted baguette slices.
