These scrumptious Oregon Blackberry Cheese Turnovers use just five ingredients and only dirty up one bowl, and freezer shortcuts like store-bought puff pastry make these pastries a snap to put together. Pretty much any white cheese works here: we used the slightly pungent Willamette Valley Cheese Company fontina, but sharp white cheddar, or brie would all work beautifully. Even a milder cheese like Monterey jack or mozzarella would be delicious — just make sure to use sweet, juicy Oregon blackberries for the best berry taste!

These baked Oregon Blackberry Dutch Baby Pancakes are gorgeous, delicious, and dead-simple — perfect for those mornings when you just don’t have the time to stand in front of the griddle flipping pancakes. Adding juicy and sweet Oregon-grown marionberries means you don’t even need syrup, and because these berries are frozen at their peak ripeness, this treat can appear on the breakfast table all year round.

These sticky-sweet and savory Marionberry-Bacon Baked beans are a cinch to make in a pressure cooker, but they’re equally easy in an oven (or a low grill on dying coals). Whether you prefer them on toast (like Brits), with brown bread (like Bostonians) or with barbecue (like Southerners), Oregon marionberries provide the perfect balance of sweet and tart that any good baked beans recipe needs.Â

Beef lettuce wraps, or ssam, are the ultimate Korean barbecue party food. Tender, succulent beef and rice are wrapped in lettuce and served with rich, salty-sweet ssamjang dipping sauce. Oregon blackberries are cooked with chile flake and aromatics to make the most fragrant, sticky-sweet blackberry ssamjang imaginable. It’d be great with skinless/boneless chicken thighs, too!

This Oregon Blackberry Cream Cheese makes a delightful shmear on a grainy bagel, or double the recipe and spread it into a graham cracker crust for a fantastic no-bake cheesecake. Thawing the frozen Oregon blackberries overnight with the sugar gives them a chance to macerate, which helps concentrate the flavor.
